plenty of fish in the sea for me to eat
must eat healthy. must eat healthy. MUST EAT HEALTHY. ok, i’m trying over here! summery foods are usually healthy, when you’re not thinking about southern bbq and stuff like that. i’m thinking fruit, fresh produce, chilled foods, seafood, but fresh fresh fresh. nothing in a meaty stew form… which is really what i love most.
this has meant fish which is more expensive than the cheap cuts i like to braise for hours on end, but is quick and easy.
i’ve always had something against salmon (except smoked, but no one can deny smoked fish/meat). i have memories of overcookedoversalmony fish with a soggy skin and full of bones. i remember whatever was cooked on that pan the next few days would reek and taste like old salmon. for some reason i even have better memories of the canned stuff plopped onto a dish that is topped with hot oil with scallions… mmmm.
i’ve been curing salmon, but this time i was unusually craving a nice piece of cooked salmon filet with a really crispy skin. i made it with a creamy saffron-fennel-parmesan pasta and with a horseradish-herb-lemon-cream sauce…so it ended up not being so healthy but hell with it, it was reallllly tasty.
tonight i was pooped and decided on making a pesto with some cod i had. i raided my fridge and all the herb-y green goodness i had was some mint, parsley and spinach. i threw that in the blender with some almonds and garlic and i have to say it turned out better than i thought. the mint and parsley weren’t overwhelming like i thought they’d be. it was nice on some spaghetti with a healthy amount of parm mixed in and some of the pasta water. i also roasted off a few tomatoes to go with the cod which provided some caramelized sweetness and tartness as well as looking ever so pretty! i was going to use some cherry tomatoes but the green stem on the larger ones looked adorable.

ugh this stupid “diet” is wearing on me. i’ve been craving poutine for weeeeeks now. and i don’t want no crappy harvey’s poutine, or from the now terrible poutines they serve from the trucks infront of city hall. none of this grated cheese bull shit i used to accept. i want some good gravy. some good curd that may or may not squeak. some double fried fries. and some malt vinegar to soak up any fries that may have been missed by gravy and curd. i want to try Poutini in parkdale when they really open up, but i’m thinking some of that caplanky’s stuff for now…
