lentil kale soup

i try to sneak leafy greens into most of my food, and this is a delicious and comforting way to use kale. i’ve never made kale chips which seem to be the popular thing these days, but i love my kale braised until its soft and rids of some of the bitterness. usually i love to add a little bacon to this soup, but its pretty damn good without!

onions, garlic, carrots are browned in a pot, then lentils are added along with lots of chicken stock. its quietly simmered on the stove for about 20 minutes, then i add the chopped kale to the top of the pot and covered it, to let it steam and wilt into the broth. give it a good stir.

  1. What a lovely picture to remind me it has been far too long since I made a good lentil soup! I also love sneaking kale into my soups, it’s texture stands up so well too!
