oh my quiche!
when i’m looking for flavour, there are a few ingredients that make something simple, tasty and gives a sweet and salty richness: bacon, mushrooms, and cherry tomatoes.
i made a quiche and these 3 ingredients, and itelevated my quiche to a different level! i added some braised leeks for good measure, but this was the best quiche i’ve made by far. other than looking amazing, it couldn’t stop eating it! and as long as you have pre-made puff pastry, its very easy to make.
i like everything i eat to be overdosed with filling, so i cooked quite a bit of bacon, mushrooms and leeks (they cook down quite a bit), and layered them in the puff pastry that was patted around the tart dish.
6 beaten eggs and about 3/4 of a cup of cream with a handful of chopped dill (my new obsession) were poured over the veggies, then i scattered halved cherry tomatoes on top. put in the oven at 350F for about 40 minutes.
best enjoyed with a simple salad or soup.
