i love nicoise salad, its a wonderful combination of fresh, good-quality ingredients that is even satisfying as a meal – especially on a hot day! i especially think the idea of potato in a green salad is as amazing as the idea of potato on a pizza!
i’ve been making a lot of quiches lately, and decided to marry the idea of a nicoise quiche! i was slightly worried about the tuna flavour over-powering the quiche, but i used a higher quality of tuna canned in oil, and it turned out very well! each ingredient was distinguishable and not fishy, with a nice fresh tartness coming from the herbs, olives, and cherry tomatoes to offset the rich egg, tuna and potato. and yes, the potato in the quiche was great!
served with a simple side salad.
