one of my favourite quick meals is always a satisfying, flavourful sandwich. this one is super easy to put together.
shrimp tossed with some smoked paprika, olive oil, S&P, sauteed quickly until just cooked and no longer transleucent. then put into a toasted Portuguese bun with avocado, tomato, lettuce, and a sauce made of mayo, yogurt, chives, lemon juice, and my favourite hot sauce, Valentina. inspired by a po boy, but somewhat healthier because its not fried!
