shrimp_sandwich


one of my favourite quick meals is always a satisfying, flavourful sandwich. this one is super easy to put together.

shrimp tossed with some smoked paprika, olive oil, S&P, sauteed quickly until just cooked and no longer transleucent. then put into a toasted Portuguese bun with avocado, tomato, lettuce, and a sauce made of mayo, yogurt, chives, lemon juice, and my favourite hot sauce, Valentina. inspired by a po boy, but somewhat healthier because its not fried!

how could this not be good?

    I made this for dinner last night! Seriously delicious. I didnt have any smoked paprika so I used chili powder and it tasted amazing.

    And as another update, I ran out of shrimp, so I’ve been eating the leftovers as a bread salad with big chunks of the few days old bread, tomatoes and avocados in the sauce as a dressing. Topped with paprika. Delicious!
