taco nut
i am a taco nut. seriously. heading to LA in october and i’ve pretty much found all the tacos i need to eat while i’m there. the best fish tacos, the best carne asada, the best carnitas, the best chorizo… the list is made, and i’ll be checking twitter to find the carts/trucks that are on the move.
wish i could find places that did fillings like you would actually find at street stands in mexico, usually including lots of offal like tongue, heart, tripe… etc. the only place i could find is in san diego !
but i digress… i thought i’d fancy things up a bit with… short rib tacos!!! braised bone-in with stock, limes halved and thrown in whole, some tomato, a cinnamon stick, coriander seed, guajillo chiles, S&P, then pulled. these were some mighty fine tacos. maybe not as fine as the carnitas i make because pork is just spectacular, but this is a taco you wouldn’t turn down.
of course with my usual toppings (we don’t need to go crazy here)… avocado, quick-pickled cabbage, cilantro, and my favourite roasted salsa from la Tortilleria. one day i will make my own salsa when i have time. one day!

these look so amazingly tasty! i would love to go to LA just to experience the foodie-ness of it
