pancakes?! i made pancakes?! and ate them?! i love breakfast but i rarely ever eat pancakes or waffles. maybe a crepe or 2 but i’m not a bread or pastry lover. i bought a bunch of blueberries (i’ve been going fruit crazy with clementines, pineapple, and recently bought a “melorange”? that i’ve yet to try).
i still need a solid pancake recipe. everytime i’ve made them its been out of a “best pancake recipe” google search, which you can imagine probably comes up with some pretty awful ones. i went with a martha stewart recipe, and i’ve found her recipes to be really hit or miss. i’m not posting the recipe because i don’t suggest anyone uses it…
if anyone out there has an easy, beautiful pancake recipe please pass it on! i’ve been thinking i probably need to whip the egg whites separately and fold it into the batter for super fluffy pancakes, it just seems like one step too much in terms of kitchen work.
these blueberry pancakes were topped with a square of butter and some lovely maple syrup.

If you are still interested, I’ll post a no fail recipe for pancakes from “The New Good Housekeeping Cookbook”
published in 1986. I have been making these since then. We have alot of sleepovers on weekends.
It’s really just as easy as making that nasty stuff from a box.
Here it is verbatum (pretty much):
1-1/4 cups all purpose flour
2 tablespoons sugar
2 teaspoons baking powder
3/4 teaspoon salt
1-1/3 cups milk
1 egg slightly beaten
3 tablespoons (vegetable) oil
In a large bowl, mix flour, sugar, baking powder and salt.
Add milk, egg and oil.
Stir just until flour is moistened. Use less milk for thicker pancakes.
It’s really important not to overmix and to keep it lumpy. Break up the larger lumps with a fork.
I won’t bother with the griddling instructions but i make them the same size as in your picture.
Make the batter a bit thicker if you’re adding blueberries or chocolate chips or whatever.
It will help keep them from sinking.
And no fake syrup here. Use the real stuff.
I’m making these again tomorrow. I’m sure you’ll like it.
Forgot to mention to let the batter rest for 5-10 minutes to thicken up.
